I have been making this Pasta with Sausage and Peppers for years. Pretty much since Charlie was born and I began shopping on a serious budget. Before kids I used to shop daily.  I would keep the basics at home, but would stop at the market on my way home from work to pick up whatever I needed for dinner that night.

Then Charlie was born. Staying home with him was wonderful, but boy back then our budget was really tight. Diapers and formula are expensive. I started shopping weekly, clipping coupons, and making my list around what was on sale that week.

That is how this Pasta with Sausage and Peppers meal came to be. Pasta was on sale, 4 boxes of Barilla [4]for $4.00, along with fresh made Italian sausage. I picked up some bell peppers and an onion, and this quickly became one of our all-time favorite meals.  When it was just  Ian and I eating, I would make  it with orzo, but that is not the kids favorite, so I use whatever I happen to have in the pantry, but rigatoni is by far Stella’s favorite.

When Barilla is on sale at Kroger [5], I always stock up. Barilla makes dinner quick and easy, and it’s a meal that everyone loves. Stella prefers hers veggies only, but the men in the house love when I add sausage. Johnsonville [6]Mild Italian Sausages  are convenient and flavorful, with all the spices and flavors built into Johnsonville Sausages,  meal prep is a breeze!


The best part, this meal costs around $10 to feed a family of 4 with leftovers for lunches, and is ready in about 30 minutes.

  • 1 lb Barilla Pasta [4]
  • 2 tbsp olive oil
  • 2 garlic cloves, thinly sliced
  • 1 lb Johnsonville Mild Italian Sausage, casings removed (or use ground sausage)
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 large onion, thinly sliced
  • 1/4 tsp crushed red pepper
  • salt to taste
  • Grated Parmesan for serving


  • prepare pasta according to package instructions, reserving 1 cup of pasta cooking water
  • while the pasta is cooking, in a large skillet heat oil over medium
  • add garlic and cook until fragrant, about 1 minute
  • add sausage, and cook until no longer pink, stirring and crumbling as it cooks - about 5 minutes (it does not need to be cooked through)
  • add peppers and onion, and cook until sausage is cooked through and vegetables are tender, about 5 minutes
  • drain pasta (reserving water) and toss with the sausage and peppers, adding 1/2 -  1 cup of the pasta water to create a sauce
  • serve topped with freshly grated Parmesan cheese


Everyone needs a few quick, easy, and budget family meals in their menu rotation, and this pasta with sausage with peppers is a keeper for sure.
