parfait pancakes

two of our favorite breakfasts in one
parfait pancakes with fruit, yogurt, and granola
we’ve been on summer vacation for a few days now, and I don’t think the kids have been up before 10 on any one of them
I don’t really mind a bit
I usually get a good walk in, check my email, and have a cup of coffee or two while enjoying the peace and quiet
it’s actually very nice
and then when they do grace me with their presence, it’s time to get our breakfast on
I love having a yogurt parfait with my favorite granola some Tillamook Farmstyle Greek yogurt, and plenty of fruit. I eat it pretty much every day. The kids LOVE pancakes. Stella thought it would be fun to put the two together.
She’s one smart kid!
I used my go-to recipe for pancakes
made them BIG
REALLY big
then filled them with vanilla yogurt, and berries
roll ’em up
and topped the pancakes with more yogurt, granola, and fruit
Ingredients
- 2 cups flour
- 4 Tbsp sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 4 Tbsp butter, melted
- 2 cups milk
- 2 eggs
- 1 tsp vanilla
- to fill and top
- vanilla yogurt
- strawberries, raspberries, and blueberries
- granola
Instructions
- pre-heat your skillet or griddle - medium heat
- butter if needed
- whisk together your dry ingredients - the flour, sugar, baking powder, salt, and cinnamon
- in another bowl whisk together the melted butter, milk, eggs, and vanilla
- pour the wet ingredient over the dry and stir just until combined - there will be lumps
- allow the batter to rest 15 minutes'
- to make the pancakes large enough to be rolled and filled - use 1 cup of batter per pancake
- carefully flip the pancake when bubbles appear on the surface and the edges begin to dry
- cook another minute until the pancake is cooked through
- spread the pancake with yogurt and add berries
- carefully roll the pancake
- top with yogurt, granola and berries
it’s two meals in one, which is fine when you end up eating breakfast at lunch time
