When it comes to breakfast recipes, it just doesn’t get better than this pancake bread. I love my pancakes, and I love my bread. This breakfast loaf is the best of both. Quite simply it is a pancake in loaf form making it fast and easy, and the perfect way to feed your hungry holiday guests.
Thanksgiving is behind us, and Christmas is fast approaching. This means the holiday baking season is finally here. My cookie list is growing longer by the day, and this is the year I finally make a buche de noel. But my favorite baking has to be breakfast. I would much rather entertain for breakfast or brunch than dinner any day.
Pancakes are one of our favorite breakfasts, but even with a large griddle they take a long time when feeding a crowd. Plus, who wants to be stuck in the kitchen when friends and family are visiting, Not me that’s for sure. I’ve been making this pancake casserole for the last few years at holiday time. We all love it, but I was really looking for something even easier.
I made a few minor adjustments to my favorite pancake batter, baked the batter in a loaf pan, and I got a delicious breakfast bread perfect for feeding a crowd. Sprinkle the loaf with a bit of powdered sugar and cinnamon, spread it with butter, pour on some maple syrup, or use all of the above. This pancake bread is a fun twist on a family favorite breakfast treat.

Ingredients:
- 2 cups flour
- 1/4 cup sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- 1/4 cup butter, melted
- 2 Tbsp maple syrup
- 1 tsp vanilla
Directions:
- butter a loaf pan
- preheat oven to 350 degrees
- in a large bowl whisk together the flour, sugar, baking powder, cinnamon and salt
- in another bowl whisk together the milk, egg, butter, maple syrup, and vanilla
- pour the wet ingredients over the dry and mix just until combined
- pour batter in to the prepared loaf pan and bake for 50 minutes
- cool in pan 5 minutes, then move to a rack to cool
- loaf slices easier when almost completely cooled
Don’t let pancake in the title keep you from enjoying this bread other than for breakfast, this loaf makes a great snack any time of day.

Help! I have huge amount of pancake batter (not your recipes as I can’t have eggs) and would LOVE to put it in a loaf pan. What switch did you make from your pancake to loaf?
my pancake bread has double the flour – for pancakes i use 1 cup flour and 1 cup milk – the loaf is 2 cups of flour for 1 cup of milk…it needs to be a stiffer batter

Today a quick online search for pancake bread produced your recipe at the top of the page, ahead of reviews of the commercial product. Congratulations! A lot of people probably copied your recipe and then put a streusel topping on it. I know that I will.
how have i not seen trader joes? i’ll have to try it,and then add streusel to mine :0
