As fun as it would be, summer can’t be all hot dogs, hamburgers, popsicles, and s’more pancakes. And as much as I love letting the kids have more food freedom, fruits and veggies do need to make an appearance. Even if I have to sneak them in when I can.
I have been making overnight oats for years, but it never occurred to me that I could use a smoothie instead of plain old milk. By using a smoothie I can sneak in fruits and veggies, nuts, even protein and the kids have no idea. I made four jars using our four favorite flavors. Strawberry topped with berries and chia seeds,
mango pineapple colada topped with mango chunks is my kids’favorite; it’s like having breakfast on a tropical island.
Banana honey almond overnights oats topped with bananas and honey almond butter,
and hands down my fave- almond joy overnight oats made with Bolthouse Farms coconut protein plus, slivered almonds and a few chocolate chips.
- for each jar use -
- 1/4 cup old fashioned rolled oats
- 1/3 cup Bolthouse Farms smoothie or protein plus juice drink
- topping choices - slivered almonds, sliced bananas, almond butter, chia seeds, sliced strawberries mango and pineapple chunks, shredded coconut
- in a jar add oats, and top with the juice or smoothie
- cover, shake, and refrigerate overnight
- before serving add your choice of toppings
A few minutes of prep the night before, and then a delicious and healthy breakfast is ready and waiting when we are. Using only two ingredients and a few toppings of your choice, these overnight oats jars cannot get any easier to make.
