Simple and delicious Oven Roasted San Marzano Tomatoes
worth heating up your kitchen for
I love roasted tomatoes, but I had absolutely no intention of turning on the oven today.
Not to be a whiner, but it is still so damn HOT.
It’s not even summer. YUCK
Anyways, dinner was already decided, a delicious panzanella inspired from bon appetit’s radicchio and olive panzanella. No oven required.
Then, I happened to spot the cutest mini san marzano tomatoes at Trader Joe’s. I had to get them, and I just knew I had to roast them to add to the panzanella. Not that I have anything against plain tomatoes, they are equally delicious, these needed to be drizzled with olive oil and aged balsamic and roasted.
No questions asked.
Even if it did mean heating up the kitchen.
It’s nothing that a chocolate frosty can’t fix.
Ingredients
- 2 cups of halved mini san marzano tomatoes {cherry or plum tomatoes would also work well|}
- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp salt
- 1/4 tsp pepper
Instructions
- pre-heat oven to 450
- place tomatoes, cut side up, on a baking sheet
- drizzle on the oil and vinegar
- season with salt and pepper
- roast 20 - 25 minutes
I really need to be on the lookout for san marzano tomatoes next time I’m at Trader Joe’s — I love them. They make the best sauce, and these roasted tomatoes would liven up a meal so well! Totally worth turning on the oven. 🙂

I wouldn’t be able to resist these either, Heather. They look so good!! On my list next time I get to Trader Joe’s. It’s 100 degrees here in SoCal, but we’ve been cooking all day too.

Roasted tomatoes are worth heating up the kitchen for. I don’t know what happened…maybe someone flipped a switch, but we had very mild temps for my part of the world. Until this past week. Ugg.
