back to school means back to busy weeknights. thank goodness for easy meals like this one pan roasted turkey kielbasa with pierogi and brussles sprouts
the one pan, one pot meal. they are every busy mom’s hero. even for moms that enjoy cooking, and i certainly do, very few enjoy the dishes that go along with the cooking. especially when time is tight. when i cook in a hurry, my kitchen usually looks like a bomb went off.
at the end of a busy day the last thing i want is to get up from the dinner table to find a mound of dirty dishes waiting in the sink. i used to turn to the casserole for busy weeknights; i love a make ahead meal, but so many casseroles are pasta based and loaded with cheese. not that i couldn’t dive fork first into a big bowl of mac and cheese daily, but that would not be wise for the waistline.
and even a casserole cannot compare to the ease of a roasted one pan meal. even i don’t mind washing one pan. and the best part is pretty much any food works.
toss some chicken with sliced onion and bell peppers for easy sheet pan fajitas. this sheet pan chicken sausage with kalette is on my regular menu rotation in the fall. pork chops with potatoes and apples is another delicious combination for fall. but with a garden full of soon to be ready to be eaten brussels sprouts i am really excited about this one pan roasted turkey kielbasa with pierogi and brussles sprouts.
and much to my surprise my fussy one ate it. yes, even the brussles sprouts. her ratio of jennie-o turkey kielbasa and pierogi to brussles sprouts may have been 3 to 1, but she ate them. and liked them. i may have even heard her say this is delicious. she’ll never admit it, but i know what i heard, and i agree with her 100%. this was delicious, and so easy.
one pan roasted turkey kielbasa with pierogi and brussels sprouts
- 1 - 14 ounce jennie-o turkey kielbasa, cut into bite sized pieces
- 1 - 14 ounce package of potato and cheese pierogies
- 1 lb brussles sprouts, ends and outer leaves trimmed
- 2 Tbsp cider vinegar
- 2 Tbsp dijon ustard
- 2 Tbsp olive oil
- salt and pepper to taste
- heat oven to 400 degrees
- combine kielbasa, pierogi, and brussels sprouts on a large rimmed baking sheet
- whisk the vinegar, dijon, and oil, and pour over the kilebasa
- season with salt and pepper
- bake 30 minutes
6 ingredients plus salt and pepper, a few minutes of prep, 30 minutes in the oven, and you have a delicious dinner on the table and only one pan in the sink. that is what i call a win.
