happy halloween! this year we’re skipping the doughnuts and cider and enjoying this old-fashioned apple cider doughnut cake instead.

i have always loved halloween. as a kid, i think i looked forward to it almost as much as christmas. trick-or-treating was a huge event in our neighborhood, and we would be out for HOURS school night or not. my dad would even drive us over to our grandparents’ neighborhood for more.

then there were scary movies, apple cider, and doughnuts. not that we needed more sugar.

when charlie and stella were little, i lost a little bit of my halloween excitement. i loved getting them all dressed up. we would choose costumes months ahead, but ian was usually the one to do the trick -or-treating, and i stayed back to pass out candy.  on school nights it was near impossible to get them into a bath and bed at a decent time, making the day after a total nightmare.

but now those days are long gone and we can get back to my favorite part of the holiday. scary movies and snacks. we may have even gone a little bit griswald in our outdoor decor this year.

as much as i am a fan of doughnuts and cider on halloween, i was looking for something different this year. then right in my inbox a recipe in the ny times for an old-fashioned doughnut bundt cake. that was all the convincing i needed.

Ingredients:

for the cake
  • 2 cups of apple cider (boiled and reduced to 1 cup)
  • 1 cup of butter, soft at room temperature
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 4 eggs, at room temperature
  • 1 tsp vanilla
  • 3 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 tsp salt
topping
  • 1/2 cup melted butter
  • 1/2 cup sugar mixed with 2 tsp cinnamon

Directions:

  • preheat oven to 350 degrees
  • grease a tube or bundt pan
  • in the bowl of a stand mixer, fitted with paddle cream the butter and sugars until light and fluffy - about 5 minutes
  • add eggs one at a time, scraping the bowl after each addition, then add vanilla
  • in a separate bowl whisk together the flour, baking powder, cinnamon, nutmeg, and salt
  • with the mixer on low add half of the flour, add the cider, then add the remaining flour
  • mix until everything is incorporated, then using a spatula scrape the bottom of the bowl making sure the batter is well blended
  • pour batter into the prepared pan, tap pan on counter to remove air, then bake until a pick comes out clean - 45-50 minutes
  • cool in pan 15 minutes, then carefully flip onto a rack to cool
  • brush the cake with melted butter and spoon on the cinnamon-sugar

you know how i love my old-fashioned doughnuts [5], but on halloween apple cider doughnuts [6] are a must. this year stella has basketball, and a party, and with pick-ups and drop-offs all over town, doughnuts were not going to happen. this old-fashioned apple cider doughnut cake is my new favorite way to halloween. it tastes SO much like apple cider doughnuts.  obviously the cake is baked and not fried. even better, it can be made ahead of time.  imo doughnuts need to be eaten fresh, and warm.

i had planned to make a glaze, but stella loves her cinnamon and sugar doughnuts, so i brushed the slightly warm cake with melted butter and covered it in cinnamon sugar.
