I don’t stop for coffee very often. Most mornings there isn’t time, and I tend to prefer the coffee I brew at home. Last Friday, as a treat for making it through a busy week, I actually decided to treat myself to a latte on the way home from school drop off.

The young gal who made my coffee somehow managed to crush the cup when she put the lid on, and the lid never really stayed put. Of course it spilled all over me the minute I picked it up. Not really the treat I had in mind.

I should know better. Homemade is always the way to go.

This latte is dairy free. I love blending my coffee with coconut oil. It makes the coffee super creamy, no cream (and the fat that it adds) needed, and really keeps me going all morning long. With a bit of pumpkin puree, cinnamon and nutmeg, this is a better for you version of everyone’s favorite fall drink. Not an artificial ingredient to be found. I prefer my coffee sans sugar, but feel free to add a bit of maple syrup to sweeten your latte if you like.

To make my pumpkin spice latte extra special, and to forget my coffee shop incident, I topped my latte with some whipped coconut cream and nutmeg. You’ll never have the urge to stand in line again. I know I won’t.

Ingredients:

  • 1 cup (6 ounces) hot coffee
  • 1 Tbsp pumpkin puree (not pumpkin pie filling)
  • 1 Tbsp coconut oil
  • 1/4 tsp cinnamon
  • dash of nutmeg
  • whipped coconut cream (optional)

Directions:

  • place coffee, pumpkin, coconut oil, and spices in the jar of a blender
  • blend until frothy (about 30 seconds)
  • serve topped with whipped coconut cream and nutmeg (optional)

This latte is a great way to use up that little bit of pumpkin puree I always seem to find in the fridge. Not a fan of coffee, hot cocoa with some pumpkin and spices…YUM! Stella has been making one every day after school all week.
