{no-bake} Fudge Brownie Bars

We had a fantastic weekend glamping.
Yes, I said glamping.
When you have temperature control, 2 tvs (we did not watch any thank you very much), running water (wahoo),a coffee maker, and a microwave (also did not use), you cannot consider yourself camping.
Mountain air, a rushing river, and evenings spent around a campfire are truly some of the best things on earth.
However, after a weekend of hot dogs, burgers, chips, and way too many marshmallows I am ready for some nutrition.
These brownie bars are my version of a larabar.
Sweet, delicious, and so easy to put together.
They are also quite nutritious.
Of course, they don’t taste exactly like a brownie, (especially if you ask my kids), but they are seriously chocolaty!
All you need is:
1 cup of pitted dates (I used medjool dates from Trader Joe’s)
1 cup of almond meal (you could use plain almonds, or walnuts, and I do plan on trying them with peanuts, but I had almond meal at home)
4 tbsp of cocoa powder
and 2 tsp of vanilla
blend everything together in a food processor
using parchment paper, wax paper, or plastic wrap, form into a rectangle (or square if you are so inclined)
cut into bars (I made 4) using a sharp knife or pizza cutter
wrap and store in the fridge.
A sweet you can feel good about enjoying!
