As a kid growing up I was not a fan of tuna sandwiches in my school lunch. And pretty much every Friday during lent that is what I would find. A warm, stinky, squishy mess. Lockers and tuna do NOT get along. At least I wasn’t alone; all my friends were packing the same thing.
Now that is not to say I don’t love tuna fish. I absolutely do, and as long as it doesn’t find its way into a school lunch bag, my kids do too. And tuna has changed a lot since my brown bag days. No more suspicious pink meat in a can. Bumble Bee® Solid White Albacore Tuna is firm and not the least bit soupy. Bumble Bee® Solid White Albacore Tuna has a mild fresh taste, that needs little more than a dash of salt and pepper to be delicious right out of the can. No mayo needed whatsoever, and no more old school tuna recipes for me. Although, Ian LOVES tuna noddle casserole 🙂
Usually I just toss my tuna with some lemon juice and salt and pepper and eat it with crackers. YUM! But after some fridge scouting I stumbled upon a few leftover nicoise olives from our cheese board, and on the counter was an about to become overripe avocado and a bag of grape tomatoes.
Why is it that the meals that just “come” together always end up being my favorites?
- 2 avocados, halved and pitted
- 1 - 5 oz can of Bumble Bee® Solid White Albacore Tuna in water
- juice of 1/2 lemon
- salt and pepper to taste
- 2 Tbsp shallots, finely chopped
- 1/4 cup of halved and pitted nicoise olives
- 1/2 cup of grape tomatoes, quartered
- gently mix the tuna with lemon juice, and season with salt and pepper to taste
- fold in the shallots, tomatoes and olives
- divide the tuna among the four avocado halves
- enjoy immediately
