who doesn’t love dessert for breakfast? surprise mom this year with mixed berry granola crisp in bed.
as a former waitress, i spent most of my twenties working mother’s day brunch. it taught me one thing…if you want to enjoy your meal, do not take your kids to brunch for mother’s day. the wait is long. the lines are infinite. someone always spills, and kids have to pee every 15 minutes when you take them in public.
teens aren’t much better.
as for me, i enjoy mother’s day on the patio. in my jammies. coffee in hand. if the kids happen to make brunch that is an added bonus. this mixed berry granola crisp is easy enough even for the dads to manage.

mixed berry granola crisp
Ingredients:
- 1 lb strawberries, hulled and quartered
- 6 ounces raspberries
- 6 ounces blackberries
- 1/4 cup sugar
- juice from 1 lemon
- 1 1/2 Tbsp cornstarch
- 1 cup old fashioned rolled oats
- 1/2 cup almond flour
- 1/4 cup flaxseed meal
- dash of salt
- 4 Tbsp butter, melted
- 1/4 cup maple syrup
Directions:
- preheat oven to 350°
- in a large bowl combine the berries, sugar, lemon juice, and cornstarch
- in a separate bowl add the oats, almond flour, and flax,and salt
- add butter and syrup, and toss to combine
- pour berries and their juices into a 9 inch pie pan
- top with the granola
- bake 35-40 minutes until the berry juices are bubbly and the granola is golden brown
- serve with yogurt
i’m a firm believer that pie, crisp, crumble and the like are perfectly acceptable breakfast fare. this berry crisp has a bit less sugar than dessert versions. it’s loaded with berries. i used raspberries, blackberries, and strawberries. the original from deb perleman in bon apppétit calls for strawberries alone. naturally the kids love it topped with ice cream, but for brunch i thinks it’s perfection topped with greek yogurt.
