with stellas birthday now behind us, it is all about getting ready for christmas. after a weekend basketball tournament (the girls were tournament champs), and a crazy birthday celebration with more than 50 of stellas teammates and school friends, we finally put our tree up and finished decorating.

to celebrate our own personal tree lighting, i made these mint chocolate brownie cookies. (also i found last years candy canes stuffed deep in our stockings).

when my sister and i were kids, my mom had a cookie baking schedule for the weeks leading up to christmas. every weekend we made at least two different varieties. as a kid, cut out cookies were my favorite and required two days for baking and frosting.

we would listen to our favorite holiday records, eat way too much cookie dough, and make a really big mess for our mom to clean up. it is one of my most favorite holiday traditions.

of course now charlie is too cool to bake with mom, and stella is busy with basketball 6 days a week. i save the decorating for her, but i do the majority of the cookie baking.  my sister still bakes as many as our mom did, i have scaled way back.   sugar cookies, gingerbread, crinkles, and these mint chocolate brownie cookies are a must every year.

  • 6 ounces good quality dark chocolate, chopped
  • 8 Tbsp (1 stick ) of butter
  • 3/4 cup sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1 tsp pure peppermint extract
  • 1 cup of flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • crushed candy canes for topping


  • line 2 baking sheets with parchment paper or Silpat Baking Mats
  • preheat oven to 350 degrees
  • in a small saucepan melt the butter and chocolate, and let cool slightly
  • in a large bowl whisk the eggs and sugar, and then add extract
  • add melted chocolate to the eggs and sugar, and whisk to combine
  • sift together the flour, cocoa, baking powder, and salt, and stir into the chocolate (scrape the bottom of the bowl with a rubber spatula to make sure everything is incorporated)
  • scoop by the tablespoon onto the prepared cookie sheets
  • sprinkle with the crushed candy canes
  • bake 10-12 minutes (cookies should be set and glossy)
  • cool on baking sheets for 5 minutes, then move to a rack to complete cooling

these mint chocolate brownie cookies use only a few ingredients, so choose the best quality you can find. for the chocolate i use 70% Bittersweet Chocolate  do not use chocolate chips here.  use good quality butter and pure peppermint extract.
