Pancakes are one of our favorite family breakfasts, but they are not the most convenient for a quick, get them out the door on time, meal.

Now that school is in session, I need those quick options.

But the kids want pancakes, and I want them to eat a good meal before school.

Pancake muffins are just that…pancakes in muffin form. They can be made ahead of time and warmed up for a quick, delicious, and healthy breakfast.

I happen to prefer buttermilk pancakes, and I found a few too ripe strawberries, so you get buttermilk {using Greek yogurt} strawberry pancake muffins in mini form..cause they’re cute:)





{mini} Strawberry Buttermilk Pancake Muffins


  • 3/4 cup Greek Yogurt {or buttermilk}
  • 2 tbsp melted butter
  • 1 egg
  • 1 tsp vanilla
  • 1 cup of flour
  • 1/2 tsp baking soda
  • 2 tbsp maple syrup
  • 1/2 tsp salt
  • 1 cup of sliced strawberries


  • beat the yogurt {or milk} with the butter, egg, vanilla, and maple syrup
  • combine the dry ingredients, and add them to the yogurt
  • stir just until everything is incorporated
  • gently stir in the berries
  • place 1 tbsp of batter in each mini-muffin cup
  • bake @350 for 8 - 10 minutes
  • they can be served hot, or cooled completely, stored in a ziploc bag, and then re-warmed


They get pancakes, ย I get them to eat a healthy meal, and I didn’t have to get up before dawn to get it done.
