It’s the most wonderful time of the year.
That is unless you have a to-do list a mile long, a gift list even longer, and far too little time to fit in all the things you actually want to do.
Every year I promise myself to start early, and then every year come November I panic. How is it all going to get done…you know what it always does.
The gifts always are bought and wrapped. The tree is always up and decorated, and we ALWAYS have plenty of good food and friends to enjoy it with.
With so many to-do’s, I try to really find time for my want to-do’s, those little things that I enjoy. Like baking and gifting for friends and neighbors. Stella and I love dropping off pretty wrapped baked goods. Some years we make candy. The last few years we’ve done cinnamon rolls, but this year we will be gifting these…
Peppermint Chocolate Doughnut Muffins
do you see that ganache, it is heavenly and so easy to make
Both the muffins and the ganache were made with International Delight Peppermint Chocolate Truffle, probably my favorite of the seasonal flavors.
Nothing says holiday spirit like chocolate and peppermint.
Ingredients
- For the doughnut muffins -
- 1 cup of flour
- 1/2 cup cocoa powder
- 2 tsp baking powder
- 1/2 tsp salt
- 2 Tbsp butter, softened
- 1/4 cup sugar
- 1 egg
- 1/2 cup Peppermint Chocolate Truffle coffee creamer
- 1/2 tsp vanilla extract
- 1/2 tsp peppermint extract
- for the ganache
- 1/2 cup Peppermint Chocolate Truffle
- 1 cup semi-sweet chocolate chips
Instructions
- spray a mini muffin tin with cooking spray
- combine the flour, cocoa, baking powder, and salt
- cream together the butter and sugar, add the egg, creamer and extracts, and then stir in the flour - mix just until everything is incorporated
- scoop batter by tablespoon into muffin tins
- bake at 350 for 10 minutes
- while the muffins bake, make ganache
- heat the coffee creamer on medium until bubbles begin to form around the edges
- place the chocolate chips in a non-reactive bowl, pour cream over the chocolate and let sit for a minute, then whisk until smooth
- once the muffins have cooled slightly, dip each in ganache, and sprinkle with crushed peppermint sticks
