Hunger in America…

I got goosebumps just typing those three words.

50 million Americans

1 in 4 children


you may think yes…

but our nation has a food stamps program for just this reason,

and millions of Americans participate in this program

that provides $3 or $4/per person per day to supplement their food budget.


For many that $3 or $4 IS their food budget.

When I decided to participate  in

Food Bloggers Against Hunger

I knew what my goal would be,

not just to create a budget friendly meal.

but to create a meal for $4,

the amount that I would have to spend if my family relied on food stamps.


I wasn’t sure it was possible.


I decided to purchase a pound of ground beef for $2.99,

{doesn’t leave much does it}

and a pound of potatoes for $.99.

I’d  have to rely on pantry staple and fridge remnants for the rest.


Once home I found a handful of baby carrots

part of a bunch of celery

an onion

a few cloves of garlic

some spring greens

and a few small tomatoes.

Salad would be the vegetable

and our main course…

mini-meatloaf muffins

topped with mashed potatoes.


Mini-Meatloaf and Mashed Potato Muffins for Food Bloggers Against Hunger


  • 1 lb ground beef
  • 2 stalks of celery
  • handful of baby carrots
  • 1 onion
  • 2 cloves of garlic
  • 1 egg
  • 1 cup of breadcrumbs
  • salt pepper
  • 1 lb potatoes cubed
  • 3 tbsp butter


  • finely dice the carrots, celery, onion and garlic
  • add the vegetables, the egg, the breadcrumbs to the ground beef
  • seasn with the salt and pepper
  • mix well
  • press into 12 muffin tins
  • bake @350 for 35 minutes
  • while the meat loaves are baking boil the potatoes
  • mash with the butter
  • once the meat loaves are done top with the potatoes
  • place under the broiler for a 1 - 2 minutes until the tops begin to brown
  • serve with the salad
