Years ago, when my husband and I first got married, we loved heading into San Francisco for dinner. It was our favorite sort of entertainment. Who am I kidding, eating still is our favorite form of entertainment.

My husband, being the creature of habit that he is, would always order a Cesar salad, a steak of some sort, and if they had it, a piece of flourless chocolate cake. He is a chocolate lover that hubby of mine, and the richer the better. If you’ve never tried it, a flourless chocolate cake is pretty much like fudge in cake form.

After kids and moving away from the bay area, I wanted to learn how to make his favorite dessert, and had no idea exactly how easy it was. My first attempt however did not go according to plan, and broke as I plated it.

FYI – it is never wise to make something for company that you have never made before.

Years and MANY flourless chocolate cakes later, it still is one of Ian’s favorite desserts, and it was what Stella and I decided to make for his birthday yesterday. I think it was awfully nice of me to make a cake that I couldn’t eat; thankfully I have only one day left of the juice cleanse because I could kill for a cookie.

To switch things up we made them mini using Wilton Mini Tart Pans. ย The removable bottoms of the pans make serving the cakes SO simple. They just pop right out.

The kids love when they get an entire cake on their plates.

This recipe from Epicurious has always been my favorite,and it really is the easiest cake ever, don’t let my first attempt stop you. Stella practically made these cakes by herself.

Mini Flourless Chocolate Cakes


  • 4 ounces bittersweet chocolate {chopped}
  • 1 stick butter
  • 3/4 cup sugar
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder plus additional for topping if desired


  • melt chocolate with the butter {you can use a double boiler, but I use a small saucepan over low heat, and stir constantly}
  • whisk the sugar into the chocolate, then whisk in the eggs, one at a time
  • sift cocoa powder over the chocolate, and stir just until combined
  • pour into 4 mini tart pans {or an 8 inch cake pan} that have been sprayed with cooking spray
  • bake in a pre-heated oven at 375 - 15 minutes for mini cakes, 20 - 25 for full size
  • cool in pans for 5 minutes
  • invert on serving plates, and dust with additional cocoa if desired
