Back when I first published this post in 2013, the kids were still trick-or-treating. Now three years later, I am thrilled that we are past that phase in our lives. Trick or treating was never my favorite activity.

I LOVE Halloween, and am fighting the urge to fully decorate the house before fall has even officially begun. I love that the kids still love Halloween, but parading around the neighborhood, following crowds of people, and trying to get the kids to NOT eat all the candy all at once…no thank you.

I would much rather pass out candy to cute little witches and superheroes and watch scary movies in the dark with my cider and doughnuts or chocolate pumpkin doughnut muffins.  That is my idea of a fun Halloween.

Ingredients:

  • 1 cup AP flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 2 Tbsp butter, at room temperature
  • 1/2 cup sugar
  • 1/4 cup pumpkin puree
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup milk
  • for the topping
  • 2 Tbsp butter. melted
  • 1/4 cup sugar mixed with 1 tsp cinnamon
   

Directions:

  • preheat the oven to 350 degrees
  • spray a muffin pan with non-stick cooking spray
  • whisk together the flour, cocoa powder, baking powder, cinnamon, salt, and nutmeg
  • cream butter and sugar until light
  • stir in the pumpkin,vanilla, and egg
  • add pumpkin mixture to the flour, and then stir in the milk
  • pour into muffin pan (I used a mini muffin pan)
  • bake mini muffins for 10 minutes - standard muffins will need an additional 10 - 15 minutes
  • cool in pan 5 minutes
  • dip muffins in melted butter and then coat with cinnamon/sugar

I have been making these doughnut muffins for years as a way to get my doughnut fix in a slightly healthier package. They are delicious glazed, but I prefer them dipped in melted butter and coated in cinnamon and sugar. Either way they are a delicious way to celebrate Halloween or the beginning of fall and hopefully cooler weather.
