From time to time, you may have heard me complain about my fussy eater, and the whining that takes place around the dinner table.

Yes, there is whining nearly every night, but meal time is still my favorite time of the day. There are no phones, no TV, and even though it may be hard to get a word in, I love listening to everyone talk about their days.  We always had meals together when I was a kid, and this is something I hope my kids will pass on to their families.

Even when our schedule gets crazy, and the homework seems to take all night, family meals are important. A good meal doesn’t have to take hours to prepare; in fact, most of our family dinners are ready in under 30 minutes – like this Mediterranean pasta skillet.

Dishes, are NOT my favorite part of mealtime, and that’s why my skillet gets a workout. This meal only requires a pot to boil water, and a skillet, making clean-up easy, leaving me more time to sit and chat with my kids. 



Mediterranean Pasta Skillet


  • Mediterranean Pasta Skillet:
  • 1 tbsp olive oil
  • 3 cloves of garlic {minced}
  • 2 cups of halved cherry tomatoes
  • 2 chicken breasts {cut in 1 inch pieces}
  • 1 lb egg noodles
  • 1/2 cup of pitted Kalamata olives
  • Parmesan cheese


  • Bring a large pot of salted water to a boil, and cook pasta according to directions on package
  • While the water boils, heat the olive oil in a skillet over medium heat
  • add garlic, and stir until fragrant {about a minute}
  • add tomatoes to skillet, cooking until they begin to soften
  • add chicken, raise the heat to med-high,
  • cook until the chicken is browned and cooked through {about 5 - 7 minutes}
  • drain the pasta, reserving 1/2 cup of the water}
  • toss the pasta with the chicken, adding the reserved pasta water if needed, stir in the olives and top with cheese {optional}

It’s not what is on the table that matters, but who you share that table with.
