If there is one thing my family LOVES to eat, it’s pasta. SO I was more than just a little excited to participate in Hodgson Mill’s Summer Pastabilities Recipe Contest.

Honestly, in the summer I make a pasta salad of some sort at least twice a week

Something else that I am LOVING this summer, Mediterranean flavors. Β I cannot get enough, and that is exactly what I decided to do with my Hodgson Mill Whole Wheat Pasta. {they were kind enough to send me a few different varieties}

Mediterranean Pasta Salad ~ and a GIVEAWAY from Hodgson Mill


  • 2 large chicken breasts {seasoned with salt and pepper, and cut into 1 inch pieces}
  • 1 lb Hodgson Mill Whole Wheat Angel Hair pasta {cooked according to the package}
  • 1/4 cup of olive oil {divided}
  • 2 cloved of garlic minced
  • 1 red onion diced
  • 1 red or orange bell pepper{diced}
  • 1 pint of oven dried {or sun dried} tomatoes
  • juice from 1/2 lemon
  • 1/4 cup of crumbled feta
  • basil {optional for garnish}


  • Oven dried tomatoes:
  • toss a pint of cherry tomatoes with 1 tbsp olive oil {you can also sprinkle them with sea salt and fresh basil}
  • bake @200 for 2 - 8 hours {the longer the better, but this is a personal preference}
  • While the pasta water boils. heat a skillet or grill pan {with 2 tbsp olive oil} over medium - high
  • add the garlic {cook for a few minutes}
  • add the onion and bell pepper
  • cook until the vegetables begin to soften and brown a bit { 5 - 7 minutes}
  • add the chicken and cook until the meat is cooked through {about 10 minutes}
  • Drain your cooked pasta {reserving 1/4 cup of pasta water to loosen the vegetables a bit - if needed}
  • To the pasta add the chicken, the dried tomatoes, 2 tbsp olive oil and a squeeze of fresh lemon juice
  • Top with the feta and fresh basil {if using}


This dish is delicious warm, but I prefer to chill it and eat is as a cold pasta salad.

{and the leftovers were even better the next day}

**the oven dried tomatoes may seem like a lot {8 hours}, but they are almost NO work at all, and the payout is HUGE. Β They were DELISH.
