Mediterranean Chicken


I was browsing around Pinterest and saw the most gorgeous dish. It was a one-dish Mediterranean chicken,and I knew I had to make it

for dinner


I turned off the computer, headed to Trader Joe’s, and rushed home to get this beauty into the oven.

Of course, if you use Pinterest often, as I certainly do, you know that you are supposed to PIN the items you hope to make one day.

Of course, I did not do this,

and of course when I returned home I could not find the pin anywhere.

SO, I improvised, as this dish makes that easy to do.

Simply put all of the ingredients into a baking dish

pop it into the oven

and wait.


Baked Chicken Mediterranean Style


I did brown the chicken first, so technically I used two dishes, but it ‘s worth the extra cleanup.

  • 1 1/2 pounds chicken breasts {I used 6 med size pieces}
  • 1/4 cup olive oil {divided}
  • 1 red onion {sliced}
  • 2 red or orange bell peppers {sliced}
  • 1 jar of marinated artichoke hearts
  • 1 cup of pitted Kalamata olives
  • 1 cup of cherry tomatoes
  • 1/2 cup of fresh mozzarella pearls {or cut into bite size pieces}
  • salt and pepper to taste


  • Heat 2 tbsp olive oil {over med-high} in a large skillet
  • Season the chicken with salt and pepper
  • Brown the chicken { in small batches} on both sides, and then set aside
  • Heat the oven to 425
  • Combine the onion and the bell peppers with the remaining olive oil
  • Place in the baking dish and cook until they begin to soften {about 10 minutes]
  • Top the onion and peppers with the chicken, the artichokes {and the marinade}, the olives, and tomatoes
  • Bake until the chicken is cooked through {about 15 - 20 minutes}
  • Remove from the oven and add the cheese

I’m thinking that the leftovers will be great over pasta, and that means I don’t have to cook tonight.
