We are officially on summer vacation!

Yesterday was the last day of school, and I am now the proud parent of a 5th and a 7th grader. I have absolutely no idea where the time has gone; this will be my last year in an elementary school!

To kick off the summer we are camping…well in the RV of course, so to some that may not be considered camping, but it is how I camp.

We’ll be relaxing at the river, trying to stay cool,

{it’s supposed to hit triple digits this weekend}

and probably eating too many burgers:)

The food may be my favorite part of camping;cooking and eating outside is just so much more fun. ย I did make the dessert ahead of time, as I have yet to bake over a fire…but I will try it sometime I’m sure.

Little Cherry Cakes ~adapted from bon appetit


  • 1 cup of AP flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 6 tbsp softened butter
  • 1/3 cup of sugar
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup of milk
  • 24 cherries {pitted and halved}
  • sparkling sugar


  • preheat the oven to 350
  • line standard muffin pan
  • whisk together the flour, baking powder, and salt
  • cream together the butter and sugar {scraping the sides of the bowl occasionally}
  • add the egg and vanilla
  • finally stir in the dry ingredients alternating with the milk {begin and end with the dry}
  • evenly divide the batter among the muffin tins
  • top each with 4 cherry halves and a sprinkling of sugar
  • bake for 20 minutes
  • cool on a rack
  • ~store in an airtight container once completely cool
