it’s spring break week at our house. with so many trips on the horizon, i am actually happy to be spending a low key week at home. for the first time in many years, easter brunch will be at home as well. i have been scouring my cook books for the perfect spread, and these lemon blueberry cornmeal muffins will definitely be  included.

how is it the middle of april already? honestly the older i get, the faster time seems to be moving. wasn’t it just summer break? now here we are on spring break  with only 4 weeks after that until summer vacation. i’m having anxiety just thinking about it.

stella and i will be living out of a suitcase for the next few months, so i am trying desperately to enjoy every minute of this quiet week.

as silly as it may sound, the highlight of my week has been planning our easter brunch. i have not decided on the main dish yet, although we are big fans of these crepes.  i made strawberry rhubarb jam yesterday that will become the filling for sweet rolls and perhaps even jelly doughnuts if time allows. there will be plenty of fruit and of course these lemon blueberry cornmeal muffins.

lemon blueberry cornmeal muffins

Ingredients:

  • 2 cups flour
  • 1/2 cup cornmeal
  • 2 tsp baking powder
  • 1/2 cup sugar (plus more for sprinkling on the tops)
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • 8 tbsp butter, melted and cooled slightly
  • juice from 1 lemon
  • 2 cups blueberries

Directions:

  • preheat oven to 350°
  • lightly grease muffin tins or use paper liners
  • combine the dry ingredients in a large bowl
  • in a separate bowl whisk together the buttermilk, eggs, butter and lemon juice
  • stir the wet ingredients into the dry, and then gently fold in the blueberries
  • spoon batter into the prepared muffin pan
  • sprinkle with sugar
  • bake 18-22 minutes - edges will be golden brown and a pick inserted into the center should come out clean

stella is fussy when it comes to her blueberry muffins. she is a bakery muffin fan. that is until she tried these ritz cartlon blueberry muffins.  now she requests them weekly along with coffee cake. yes, she does have quite the sweet tooth.

when i stumbled across this recipe for lemon blueberry cornmeal cakes, i knew i had to add them to brunch. just in muffin form.

stella was skeptical at first. like i said, she is a fussy one. two muffins later, i knew i had a brunch winner.
