Those of you that have kids willingly eat anything you serve them, I applaud you.

I must have been absent when that lesson was taught.

I thought I knew what I was doing.

My kids may eat what’s on their plate, but there is a whole ‘lotta whine, and not the good kind.

I don’t make more than one meal, so if they don’t like it, they don’t eat; this changes nothing,  especially if dessert isn’t on the table that night.  Yes, I’m one of those parents that bribe their kids with dessert.

But I want my kids to eat dinner and actually enjoy what they are eating, so I try to find ways to please everyone. MUCH easier said than done it turns out, but not impossible.

This lasagna bowl is an example.

Stella LOVES lasagna; it is her favorite meal, but she doesn’t like meat, so meat sauce is out. She loves her lasagna with tomatoes, spinach and cheese. Oh, and I should mention that she will only eat homemade noodles.  Charlie is exactly the opposite, it has has to have meat; he’d happily leave off the spinach too.

Ian and I are the easy ones, but honestly lasagna is not the easiest meal to prepare, especially on busy weeknights.

Lasagna bowls make lasagna possible even on a tight schedule and everyone get’s to have it their way.

It’s the burrito bowl of pasta, and a new family favorite.

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 8 servings


  • 1 lb of ground beef or turkey, seasoned and browned
  • 1 lb of orzo, cooked according to package
  • tomato sauce, this is my go-to 5 minute sauce
  • 1-5 ounce bag of baby spinach, sauteed
  • 1/2 cup mascarpone
  • 1/2 cup shredded mozzarella
  • Parmesan, grated


  • place cooked orzo in bowl
  • top with meat, spinach, and sauce
  • add 1 tbsp of mascarpone and 1 Tbsp shredded mozzarella
  • sprinkle on freshly grated Parmesan
