irish cream panna cotta with irish cream chocolate ganache

dessert gets a boozy makeover for st. patty’s day
irish cream panna cotta
we don’t get too crazy over here for st, patty’s day.
yes, there were some green cookies
and mint chocolate pancakes are pretty festive,
but it’s been a few years since we had littles in the house, and teens don’t get that exited about leprechaun traps and green hair dye
for us st. patrick’s day means we eat all the corned beef and cabbage we can handle, have a Guinness or two (NOT the teens)
and this year our dessert is getting boozy
seeing as how I have MANY jars of homemade irish cream in the fridge
Ingredients
- 1 1/2 cups of heavy cream
- 1 packet of unflavored gelatin,
- 1 tsp vanilla
- 1/2 cup Irish cream
- for the ganache
- 1/2 cup irish cream
- 4 1/2 ounces of chopped chocolate, or chocolate chips
Instructions
- heat cream over medium heat, just until boiling
- remove from the heat, and sprinkle on gelatin
- whisk until the gelatin has dissolved completely
- add the vanilla and Irish cream
- pour into ramekins, allow to cool, and then cover and chill at least 4 hours
- to make the ganache, place chopped chocolate or chips in a heat proof bowl
- bring the irish cream to a boil, and pour over the chocolate
- allow to sit for 60 seconds, and then whisk until smooth
- top the panna cotta with the ganache, and return to the fridge until you are ready to serve
the kids are going to have to be happy with the cookies, because this irish cream panna cotta is adults only
*to make this family friendly, replace the irish cream liqueur, with irish cream coffee creamer
