Hot Chocolate Cookies for the Great Food Blogger Cookie Swap


This was my first year participating in the
Great Food Blogger Cookie Swap
     supporting pediatric cancer

I had such a great time,
I mean who doesn’t love getting boxes of delicious cookies in the mail,
and it was for a great cause.

I have been blessed with two healthy children, but know so many that are not.
By working together, a little cookie can go a LONG way.

Seeing as how I have been addicted to all tings hot chocolate,
I went with a hot chocolate and marshmallow cookie.

The recipe was new to me, so I was taking a bit of a risk
but it was VERY worth it;
plus, my recipe was adapted from this one @ Baked Bree,
so I was pretty confident that they would turn out well:)

I hope my swap partners agree!

Hot Chocolate Cookies:
2 sticks of butter {softened}
1 cup of sugar
3/4 cup of brown sugar
2 eggs
 1 tsp vanilla
3 cups of flour
1/2 cup of hot cocoa mix {recipe here}
1 tsp salt
1 tsp baking powder
1 cup of mini marshmallows

combine dry ingredients
in the bowl of a mixer, cream together the butter and sugars
add in the eggs and vanilla
gradually add in the dry ingredients
and gently stir in the marshmallows

scoop onto a parchment lined sheet
bake @ 350 for 10 minutes

allow them to cool slightly {if you can}
and dig in!
