I know I have mentioned before how much I LOVE bread, and cheese.

I only wish I felt the same about my veggies.

Don’t get me wrong, I do like veggies of all kinds, but not like my bread.

So, I’ve gone and decided to do t his crazy 21 day grain and dairy free detox. ย It seemed like the right thing to do, until I realized that pretty much everything I love to eat has grain, dairy, or both.


Processing The Almonds


This is going to take some serious willpower, something that I don’t typically have ย a lot of, and plenty of yummy snacks to take my mind off bread.

One of my favorite snacks is apple slices with almond butter, but 21 days with no grain or dairy deserves something a little more than my usual plain almond butter..

Honey Roasted Almond Butter


  • 2 Tbsp Raw Honey
  • 2 Tbs Coconut Oil {melted}
  • if you don't like the flavor of coconut, you could use another oil
  • 2 cups of raw almonds


  • Combine the honey and coconut oil
  • Toss the almonds in the honey/oil, making sure they are evenly coated
  • spread evenly on a baking sheet{I always use my silpat liner}
  • Roast in a 350 degree oven for about 15 minutes {watch for burning}
  • cool the almonds completely
  • once cool, "blend" into butter
  • In my food processor {fitted with the blade} this took about 15 minutes
  • stop occasionally to scrape the sides
  • store in an airtight jar in the refrigerator


Once you try homemade almond butter, I swear you will never go back to store bought. ย It is that good. And easy. And makes you forget about not eating bread or cheese.
