homemade vanilla wafers

skip the box, and try homemade vanilla wafers instead
as a kid I was never a fan of nilla wafers, they always seemed so plain
no chocolate chips or oats, raisins or nuts
no m&m’s or frosting, not even a sprinkle
just a plain jane vanilla wafer
then I fell in love with banana pudding, and you simply cannot have banana pudding without the vanilla wafers
sure you could buy them, but homemade vanilla wafers could not be any easier to make and you know how I feel about anything homemade…SO much better than the box
with a few simple ingredients you already have at home and a few minutes in the oven, homemade vanilla wafers are anything but plain
Ingredients
- 1 cup of flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 Tbsp butter, softened
- 1/2 cup sugar
- 1 Tbsp vanilla
- 1 egg
Instructions
- pre-heat the oven to 350 F.
- sift together the flour, baking powder, and salt
- in the bowl of a stand mixer cream together the butter and sugar
- add the vanilla and egg,
- gradually add the flour, and mix just until combined
- chill dough for at least 10 minutes to prevent cookies from spreading too much
- roll in 1 tsp size balls, and place on a parchment or silpat lined baking sheet
- flatten the balls slightly, and bake 15 minutes - until golden
- cool on rack
without so much as a chocolate chip, I wasn’t sure the kids would like them

After chilling the dough for 30 minutes, I dusted my hands with flour and attempted to roll it into balls, but the dough is so sticky it is almost impossible. Do you have any tips or suggestions?
I’m really not sure what happened – there isn’t much liquid – only the egg. I would have to suggest adding just a bit more flour. Also, for softer doughs like this – a cookie scoop is a lot easier than rolling by hand.
I just tried to make these (I’m overseas where Nilla Wafers do not exisit). The taste came out great, but the shape was all wrong. Yours looks nice and ‘thick’ and even. Mine came out flat and crispy around the edges, even caramelized. Like said, the taste was good, but I was looking for the softer feel of a Nilla Wafer, plus that nice round, puffy shape. What might have I done wrong?
mine were crisp and not really chewy, a true nilla wafer is a crisp cookie, but I cannot be sure what went wrong with your batch

I used white wheat flour and vegan butter (I have a dairy allergy kid) and these wafers were PERFECT! I pushed the tops of them down and they were crisp and yummy. They really had the store bought shape and I will be making these again! The most aggravating thing was the rolling and the pressing but after putting the dough in the freezer (and it being cool in the house) the dough was a bit easier to handle.
