i don’t care how old you are, sometimes you just need a peanut butter and jelly sandwich. it’s a little bit sweet. a little bit salty. pure comfort food, especially if your peanut butter and jelly is made on that soft and squishy store bought white bread.

charlie loves his p b & j too. every time i see him making a sandwich i get a serious craving. i’ll give in from time to time, but honestly bread and i have a love hate relationship. this easy homemade peanut butter and jelly granola is everything i love about the sandwich. it’s sweet and salty. it’s loaded with soft and chewy clumps of peanutty oats, crunchy berries, and plenty of peanuts. in a word it is granola perfection.
i’ve made plenty of granola over the years. this basic granola loaded with berries is my breakfast go-to with yogurt and fruit. i make it all the time. when i’m trying to be extra good at weight watchers, i love this healthy banana bread granola. at holiday time i love to snack on gingerbread granola, plus it makes the house smell incredible, but this peanut butter and jelly granola is by far the best granola i have ever had. it is completely addicting and must be kept on high shelf where i cannot reach it without a stool or i will snack hour after hour until the entire batch is gone. this i know for a fact.

homemade peanut butter and jelly granola
Ingredients:
- 4 tbsp butter
- 3 tbsp brown sugar
- 3 tbsp honey
- 1/3 cup creamy peanut butter
- 1 tsp vanilla
- 1/3 cup jam or fruit preserves, melted
- 2 cups old fashioned rolled oats
- 1/2 tsp salt
- 1/2 - 3/4 cup dried berries( i love berries so i added 3/4 cup)
- 1/2 cup peanuts
Directions:
- line a rimmed baking sheet with parchment paper
- preheat oven to 300 degrees
- in small sauce pan over medium-low heat melt the butter
- whisk in the brown sugar, honey, and peanut butter
- once melted, remove from the heat and stir int he vanilla
- in a large bowl combine the oats with salt
- pour peanut butter mixture and jam over the oats and stir to combine
- spread the oats on the baking sheet and bake 15 minutes
- gently stir oats, and return to the oven for another 15 minutes (the granola will be soft, but hardens once cool)
- once the granola is cool stir in the peanuts and dried berries
- store granola once completely cool in an airtight container
i used homemade strawberry preserves for the granola, but any jam or jelly works here. after the granola bakes i add unsalted peanuts and dried strawberries. if you use grape jelly like the classic pb&j try adding raisins, or try apple butter with dried apples or raspberry jam with dried raspberries.
not that i’ve had any granola last longer than a day or two at most, this granola can be kept in an airtight container for a few weeks. if you need it to last longer i do suggest keeping it in the fridge. you can even freeze granola in a freezer ziplock bag – just make sure it is completely cool before storing.
if you want to up your breakfast game, this peanut butter and jelly granola will do the trick.
