this post was originally published way back in 2013, but creme fraiche is something i make and use all the time, so it was time for a post update.
homemade is always the way to go if you ask me. especially when it is as easy as creme fraiche.
stella has a favorite coffee cake recipe. it actually happened by accident. i have been making my grandmas coffee cake for as long as i can remember. it’s a good basic recipe. and as long as i leave out the nuts, the kids love it. one afternoon in a pinch i substituted creme fraiche for the sour cream. i wasn’t sure it would turn out; the batter was much thicker than normal. but how bad could it be creme fraiche makes everything delicious.
turns out, not only was the coffee cake good. my daughter will not eat it any other way. i was always a fan of cooking and baking with creme fraiche, but now that this coffee cake has become normal weekend fare, i use a lot more. and if you have purchased creme fraiche, you know it can be pricey.
what you may not know, is just how easy it is to make on your own.

- 1 cup heavy whipping cream
- 2 Tbsp buttermilk
- combine the cream and buttermilk in a glass jar
- cover and let sit at room temperature for up to 24 hours (mine took a full 24 hours to thicken)
- stir creme fraiche, cover and refrigerate for up to two weeks
what exactly is creme fraiche
creme fraiche is a type of soured cream. made with only 2 ingredients, buttermilk and cream, creme fraiche is thicker than sour cream, with a richer and milder taste.
