homemade basic muffin mix

Growing up, my mom made almost everything from scratch.
I longed for Smuckers jam, but my mom canned her own.
My best friends’ mom always made spaghetti with Ragu, and I thought it was the best thing ever. My mom always made homemade sauce.
The other kids had chips ahoy or oreos in their lunches, but it was homemade for the Kinzie girls. I felt SO deprived.
We did always have a few boxes of Jiffy muffin mix in our dry sink. I LOVED Jiffy muffins; especially the apple cinnamon and blueberry, and they were so easy to make. In about 5 minutes you could have them mixed and ready for the oven.
Shopping the other day I spotted a box on the shelf, and I swear I could almost smell the sweet muffins right there in the baking aisle. That Jiffy box almost made its way into my cart…
but I’m not much of a mix girl. That said, it sure would be handy to have muffin mix ready to be whipped up on busy mornings.
Of course I made my own.
- 8 cups AP flour
- 2 cups sugar
- 1/4 cup baking powder
- 2 tsp salt
- 2 tsp cinnamon (optional)
- whisk ingredients together, and store in an airtight container
to make muffins combine 2 3/4 cup muffin mix with 1 egg, 1 cup of milk, and 4 Tbsp melted butter Bake @425 degrees 18 - 20 minutes
even with my now very limited pantry space, I love having muffin mix on hand. You never know when the muffin mood might hit you.
with a basic muffin mix the add ins are the fun part | here are a few ideas to get you started
1 mashed banana ( and chocolate chips of course)
1 cup of blueberries (or mixed berries)
1 cup of chocolate chips
for carrot cake muffins add 1/2 cup of finely shredded carrots and 1/4 cup raisins
mocha muffins – add 1 cup mini chocolate chip with 1 tsp espresso powder
doughnut muffins – add 1/4 tsp nutmeg and 1 tsp vanilla
apple cranberry – add 1/2 cup apples sauce and 1/2 cup dried cranberries
pumpkin – add 1/2 cup pumpkin puree and 1 tsp pumpkin pie spice (can also add 1/2 cup chocolate chips)
I could go on, and on, but I know you get the idea.
The combinations are MANY, and in less than 30 minutes you could be enjoying delicious homemade muffins.
