i cannot believe that we are back to school next week.  as much as i have loved the lazy days of summer, i am really excited for this year to get underway. i love having the kids home, and i love not having to be out of the house early every day, but i also love having a quiet house to work in.

teens are fun, but they can also be loud, busy, did i say loud, and stress inducing! so, my plan for the first week of school….relax, relax, read, bake,  and then relax some more.

i have my books lined up, my fridge is packed with tubs of noosa yoghurt and noosa mates perfect for relaxing afternoon snacks, and i’ll be baking more loaves of this healthy zucchini banana bread. even better, with the kids in school I won’t  have to share.

a slice of this bread, my favorite banana chocolate peanut noosa, and a good book are pretty much the best ways i could think of to spend a quiet kid free morning or afternoon.

  • 2 very ripe bananas, well mashed
  • 1 whole egg + 1 egg white
  • 2 Tbsp honey
  • 2 Tbsp oil
  • 2 Tbsp whole milk
  • 1/4 cup 0% greek style yogurt
  • 1 3/4 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • dash nutmeg (optional)
  • 1 zucchini, grated


  • spray a loaf pan with non-stick cooking spray
  • preheat the oven to 350 degrees
  • in a large bowl whisk together the banana, eggs, honey, oil, milk, and yogurt
  • stir in the flour, baking powder, baking soda, cinnamon, salt, and nutmeg (if using)
  • fold in the zucchini, and spread batter into the prepared pan
  • bake 45 minutes or until cooked through
  • cool in pan 15 minutes and then remove to a rack to complete cooling
  • once completely cool, bread can be stored in an airtight container lined with a paper towel, and then covered with another paper towel (to absorb moisture) for up to 4 days, freeze for longer use
