Thanksgiving is just a few weeks away, and these
harvest grain dinner rolls deserve a special place at the table
I know I say it ALL the time, but man, how did it get to be mid-November already?
Thanksgiving is fast approaching, and this year I actually get to host. I’ve been planning my menu and collecting recipes for weeks. There are so many things I would love to try that most definitely we will have WAY too much food for our small group, but you know those leftovers are the best part of Thanksgiving.
Whether you are hosting yourself, or simply bringing a dish to share, it always helps to have plenty of ideas to choose from, so I was very excited to partner with some friends to bring you more ideas than you could ever need. There is sure to be something for every one, from appetizers, and main dishes, to sides and of course dessert. Consider this your one stop Thanksgiving recipe shop.
My contribution, harvest grain rolls.
I don’t know about you, but for me a holiday table is not complete without fresh bread or rolls. These harvest grain rolls are probably my favorite, although these pumpkin wheat rolls were pretty darn good too. They are loaded with whole grain goodness, but are anything but heavy. Mildly sweet, soft and buttery, they would make an excellent leftover turkey sandwich, that is is you have any rolls left. I’m betting we won’t have so much as a crumb leftover.
Ingredients
- 2 1/4 cups flour
- 1 1/4 cup whole wheat flour
- 1/4 cup rolled oats
- 1/4 cup flax, ground
- 3 Tbsp brown sugar
- 1 tsp salt
- 1 envelope active dry yeast, I use Red Star
- 1 1/2 cups milk
- 2 Tbsp butter
Instructions
- warm the milk with the butter, just until the butter begins the melt
- combine all of the dry ingredients, including the yeast, and stir in the warm milk and butter
- knead (either by hand or using a dough hook if a stand mixer) until you have slightly sticky but smooth ball
- cover the dough and allow to rise until doubled, about 1 1/2 hours
- punch the dough down, divide into 16 pieces, and roll each into a ball
- place the rolls in a well greased baking dish, cover and allow to rise again for 1 hour
- pre-heat the oven to 375
- bake 20 - 25 minutes until the tops are a nice golden brown
- remove form the oven
- if you prefer a softer crust, brush with melted butter as soon as they come out of the oven
- serve warm

I always make my grandma’s recipe for rolls at Thanksgiving, but I am intrigued with the inclusion of grains in these. They look beautiful! I think I’ll try them for Christmas. Pinned!

I don’t really know of a sub for flax, you may just leave it out and add a bit more flour if the dough is too wet

These were THE best bread rolls I have ever made. I’ve baked my fair share of bread, but I can honestly say I have never tasted anything better – breadwise. I made a double batch for a church dinner, and baked close together in a large tray these turned out moist and perfect. THANK you for a recipe I will NEVER LOSE!!!
