Glazed Doughnut Muffins

You probably would not have guessed that I am not a BIG sweets eater.

Typically, I prefer savory to sweet.

Sure, I enjoy dessert.  Especially if it’s a fruit pie.

When I snack, I will usually choose salty.

One exception – doughnuts.

I have ALWAYS loved doughnuts.

HUGE weakness for sweet, fried, glazed dough.

When I saw this recipe at Lil ‘Luna, I knew I would be making them.

Problem – would I be able to eat just one?

Solution – Teacher Appreciation Day.

Tomorrow is our final day of school, and it is also the day we celebrate our teachers.
Luckily, we will be sharing our Glazed Doughnut Muffins – now I won’t be able to eat all 12
     ~yes they are that good!

 Recipe adapted from Lil’Luna
For the muffins:

2 cups of flour ( I used half whole wheat)
3/4 cup of sugar
1/4 cup of butter (melted)
2 eggs
1 cup of milk
1 tbsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla

Combine the flour, sugar, spices, salt, and baking powder
Add in the eggs, milk, butter, and vanilla

Mix until well combined

Pre-heat the oven to 375F
line muffin tin

fill 2/3 with batter

bake for 20 minutes

allow to cool

For the glaze:

4 tbsp melted butter
combined with 1 cup of powdered sugar
1 tsp vanilla
2 tbsp water

once the muffins are cool, dip in the glaze
