My house is finally flu free, thank goodness it seems to have been hanging around for EVER. And surprisingly enough, no one has complained about our fruit and veggie loaded menu this week. I consider that a complete mom win for sure.

We’ve been downing smoothies, eating carrots, cucumbers and bell pepper with hummus like they are going out of style, our pasta has been HEAVY on the asparagus and peas, and thanks to ElevĀte salads, our lunches are healthy as well (even for those of us that eat on the go).We stumbled upon them in the produce section at Walmart. The varieties sounded interesting, so we picked up two of each.

They were all so good, that Ian and I have been eating them daily for months; the Southwest is by far my favorite with the power grains a close second. Ian is a classic Caesar all the way. Now, even Stella has started taking them to school everyday. She is addicted to all things kale and Caesar. They are fast, convenient, and most importantly they make eating healthy delicious.

But eating healthy doesn’t have to mean you cannot have dessert from time to time, and with summer fruit starting to appear in the markets, dessert can be as healthy as it is delicious.

This fresh cherry and mascarpone tart is easy to make, gluten free, and a delicious way to get your cherry fix in. Of course if you are like me, you can add cherries to your favorite ElevĀte salad.

fresh cherry and mascarpone tart {for one)

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 1 hour, 25 minutes

Yield: 1 tart

Serving Size: 1 tart


  • for the crust -
  • 1/4 cup almond meal
  • 1 tsp sugar
  • 1/8 tsp cinnamon
  • dash of salt
  • 1 Tbsp coconut oil, melted
  • for the cherries -
  • 1 cup of cherries, halved and pitted
  • 1 tsp sugar
  • 1/4 tsp lemon juice
  • for the mascarpone filling -
  • 2 ounces mascarpone
  • 1 tsp lemon juice
  • 1 tsp powdered sugar
  • 1/4 tsp vanilla
  • dash of salt


  • begin by making the crust -
  • combine the almond meal, sugar, cinnamon, and salt
  • stir in the coconut oil
  • press into a ramekin, and bake at 350 degrees for 10 - 12 minutes
  • allow to cool
  • mix cherries with sugar and lemon juice, and allow to sit for 1 hour
  • blend the mascarpone with the lemon, sugar, and vanilla (should be very smooth and creamy)
  • allow to sit for 1 hour
  • top crust with mascarpone and cherries


** total time includes resting tine for cherries and mascarpone filling

No one was more surprised than me that even Stella (who I lovingly refer to as my fussy one) LOVED these super food + greens for lunch, Do you think your kids would like super foods in their lunch?
