Halloween is just a few days away, and you know what that means…
bye bye pumpkin and apple
hello all things gingerbread and peppermint
I don’t have anything against gingerbread and peppermint, but honestly I am not ready to say goodbye to apple and pumpkin just yet. It feels too soon; our fall weather just arrived and I’m loving every minute of it.
Over the weekend I picked up the most gorgeous Honey Crisp apples. Are they not the BEST. APPLES. EVER. I’m ll about the Granny Smith for pies, but for eating it’s Honey Crisp or nothing. I was all ready to enjoy my apple, but then I opened the door to let the dogs out. BRRR….our mornings have gotten pretty chilly. A hot breakfast was in order, but I also really wanted my apple.
Enter french toast apples.
Sliced apple rings coated in cinnamony (totally a word right) french toast batter, cooked until golden brown and deliciously sweet.
Ingredients
- 2 large apples - I used Honey Crisp, peeled, cored, and sliced in rings
- 1 egg
- 1 Tbsp cream
- 1/4 tsp vanilla
- 1/8 tsp cinnamon
- pinch of nutmeg
- pinch of salt
- butter for griddle or skillet - if needed
Instructions
- heat your griddle or skillet over medium heat, brush with butter if needed
- whisk together the egg, cream, vanilla, cinnamon, nutmeg, and salt
- dip apple slices in batter
- cook until bottom is golden brown and the egg is cooked - about 2 minutes, flip and cook other side another minute or two
- serve hot with syrup or powdered sugar

I totally agree with you. Apples and pumpkin through Thanksgiving. Maybe by then we will have some cooler weather and it will begin to feel “unsummer”! This sounds like a delicious breakfast or a dessert. Great idea.

I squealed when I spotted the honeycrisps in my store the other day! I don’t even like apples but those… they are so good! I’m totally making this for Saturday breakfast this week. My kids are going to love it!

What an absolutely fun way to serve apples for breakfast!!! And usually I’m ready to move on to peppermint things right about now, but for some reason this year I’m still rocking the pumpkin and apple treats!
