easy homemade soft pretzels

I have a confession to make.
My lunch packing lately has been a bit lame. With busy schedules, I’ve been buying a lot more snack foods than I ever used to. The kids haven’t complained, but I am making it a goal for the new year to get back to making more things from scratch.
Soft pretzels are one of the kids’ favorite snacks when we’re out, especially those delicious buttery treats you get at the mall. You can’t walk by the stand without buying a bag full, or is that just me? Probably not. These easy homemade soft pretzels taste just like those mall pretzels, and believe it or not, they are not nearly as difficult to make as you think. Plus, the kids love helping to roll and twist the dough.
Ingredients
- 1/2 cup warm water
- 1/2 cup warm milk
- 4 Tbsp butter, melted, divided
- 2 Tbsp brown sugar
- 1/2 tsp salt
- 1 package active dry yeast
- 3 cups flour
- 2 cups water
- 2 Tbsp baking soda
Instructions
- in the bowl of a stand mixer stir together water, milk, 2 Tbsp of the melted butter, brown sugar, and salt
- sprinkle on the yeast, and let rest 5 minutes
- stir in the flour, and then using the dough hook, knead dough until you have a soft smooth ball
- cover and let rise 30 minutes
- divide dough into 12 pieces
- roll each into a rope, and then shape
- add baking soda to the 2 cups of water, and stir until dissolved
- dunk each pretzel in the water, and then place on baking sheet
- cover and let rise 30 minutes
- heat oven to 425 degrees
- bake pretzels at 425 for 10 minutes (rotate pans halfway through the baking time)
- brush pretzels with remaining melted butter
- cool on baking sheets 5 minutes and then move to a cooling rack
Once brushed with melted butter, the pretzels can be sprinkled with salt, cinnamon and sugar, or simply enjoyed plain. We also love them dipped in cheese sauce.
Soft pretzels are best when warm from the oven, but can be heated in the microwave for 10 seconds.
