You would think that after all these years, the kids would get bored with taco Tuesday. But they do not. It doesn’t matter how busy we are, and how late dinner actually gets on the table, if it is Tuesday there will be tacos, or burritos, or fajitas on the table OR ELSE. And no, it cannot be take-out. Stella has made that point very clear.

Maybe it’s me. I’m not the neatest cook in the kitchen, but taco night makes for a messy kitchen with lots of dishes. Skillets for meat and veggies, saucepans for rice and beans. Bowls with tomatoes, lettuce, salsa, cheese. ¬†After dinner the kitchen looks like a bomb went off.

NOT with these easy sheet pan fajitas. One bowl and a whisk for the sauce, and one pan for the meal. All you need then are the tortillas and chips. Even better, the meal takes just 15 minutes to bake and tastes better than any restaurant fajitas I’ve ever had.

  • 1/4 cup olive oil
  • 2 Tbsp cider vinegar
  • 2 Tbsp Worcestershire sauce
  • 2 tsp chili powder
  • 2 cloves of garlic minced
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1 lb chicken breast. cut into strips
  • 4 bell peppers (red, yellow, or orange) cut into strips
  • 1 red onion thinly sliced
  • tortillas


  • preheat the broiler
  • begin by making the sauce
  • whisk together the olive oil, vinegar, Worcestershire, and spices
  • place bell peppers and onion on a large rimmed baking sheet
  • toss chicken in the sauce, place on top of peppers
  • broil on high for 15 minutes (flipping chicken at the half-way point) or until chicken reaches 165 degrees
  • serve with tortillas

Top your fajitas any way you like, but there is so much flavor in the marinade they don’t need anything at all to be delicious.

*we like our meals HOT, so I use 1/2 tsp cayenne in the sauce. If you don’t like the heat, reduce the cayenne to 1/4 to or leave it our completely. Your fajitas will still be full of flavor.
