{easy} Chicken Cordon Bleu

Chicken Cordon Bleu has always been one of my favorite meals.

It also happens to be a meal that almost everyone in my family enjoys.
{the fussy one will take a few bites, which is a win in my book}

The problem, is that most Cordon Bleu recipes take quite a bit of work.
Not only are our weeknights packed with activities,
but honestly I don’t love rolling raw chicken.

This version is so easy to put together, it’s perfect for those busy nights, and it tastes just as great as the original.

Easy Chicken Cordon Bleu
4 chicken breasts
1 can of cream of chicken soup
4 slices of prosciutto
4 slices of Swiss cheese
1/4 – 1/2 cup of Panko bread crumbs
salt and pepper to taste

pre-heat the oven to 425
butter a baking dish
season the chicken with salt and pepper
place the chicken in the baking dish
top each breast with one slice of prosciutto
and once slice of cheese
pour can of soup over the chicken
top with the bread crumbs
cover loosely with foil
bake for 30 – 40 minutes {depending on the size of your chicken breasts}
remove the foil and broil on low until the top is golden brown
