How many batches of chocolate chip cookies have you made in your lifetime?

Most likely WAY too many to count.

In my house, it is the ONLY cookie ever requested. I sneak in the occasional oatmeal, a snickerdoodle or two, but in  my kitchen, if you see me baking cookies, you can bet they’re chocolate chip.

This is probably the reason that I am always trying a new cookie recipe; making the same cookie time and again would just be boring.

Lately, we have been LOVING the soft-baked variety, and these Greek yogurt cookies got rave reviews.

but…tomorrow is our last day of school


so we need REALLY good cookies

like cookies as good as the last day of school

and that is SOOO good.

How do  you make chocolate chip cookies that good..

{and a little caramel extract}


These cookies are thick and chewy, have a hint of caramel, and are FULL of chocolate,

but be careful not to over-bake them.


Double the Chocolate Caramel Chocolate Chip Cookies


  • 2 1/2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp corn starch
  • 1/2 tsp salt
  • 1 cup of packed brown sugar
  • 1/4 cup of sugar
  • 1/2 cup of VERY soft butter {not melted}
  • 2 eggs
  • 2 tsp caramel extract
  • 1 tsp vanilla
  • 3 cups of chocolate chips


  • combine the flour, baking powder, baking soda, corn starch, and salt {set aside}
  • cream together the butter and sugars
  • add in the eggs and beat until light and fluffy
  • add the extracts
  • gradually stir in the flour, and fold in the chips
  • drop by tablespoon into a parchment lined baking sheet
  • bake @350 for 10 minutes
  • allow to cool on the sheet for a minute or two and then complete cooling on a rack
