chocolate is a sure fire way to get kids, at least mine, into eating breakfast. even if it has to be grab and go. some breakfast is better than no breakfast. muffins may not be the healthiest of breakfast choices, but these double chocolate protein muffins pack in the protein and satisfy those chocolate cravings at the same time.

we’re past that new school year sweet spot. the tests and projects are rolling in and sports schedules are kicking into high gear. time is short and stress levels are rising. stella and i are both getting a crash course in time management. as in…how do you fit dinner and homework in between school and practice and still get to bed before midnight?

#mealprepmondays have been a HUGE help.

i’ve always been a meal planner. i prefer to shop once a week. naturally, i have to know what we’ll be eating. this year with one kid working and another at practice most nights, we eat at different times. meal prep is both a life and time saver. i don’t have to prepare meals three times a night, and there is never the dreaded “whats for dinner” dilemma at 5pm.

i always include a few breakfasts and snacks in my meal prep as well. granola [4] and muffins [5] are a few of our favorites. i’m trying to get more protein into stella’s diet, so i tried my hand at protein muffins. of course, when it comes to stella, she’ll try anything if chocolate is involved.

  • preheat oven to 400°
  • line standard  12-Cup Muffin Pan [10] with paper liners (or grease well)
  • in a large bowl whisk together all of the dry ingredients
  • in a separate bowl combine all of the wet ingredients
  • pour the wet ingredients over the dry and stir to combine (do not over mix)
  • spoon batter into the liners, and top with chocolate chips
  • bake 22-25 minutes
  • a pick inserted in the center will come out clean

these muffins are chocolaty. but  because these are muffins and not cupcakes, i went with a bit less sugar than most muffin recipes. especially with the hefty topping of chocolate chips, we found them sweet enough.

the greek yogurt not only adds protein, but keeps the muffins moist for days. i always use whole milk yogurt, but feel free to substitute with low fat. i also prefer plain to sweetened vanilla yogurt, but again use what you like and have on hand. if you use vanilla yogurt, reduce the vanilla extract to 1 tsp.

how to store muffins

store your double chocolate muffins at room temperature. place a paper towel at the bottom of an airtight container or zip-top bag. add your completely cooled muffins, then layer on another paper towel. seal and store for up to 3 days.

you can also freeze your muffins for up to 3 months. wrap them individually and place in a zip-top freezer bag. thaw them at room temperature, or heat on high in a microwave for about 30 seconds. you can also wrap frozen muffins in foil and heat at 350° for about 10 minutes.

our muffins, especially these double chocolate protein muffins, never last longer than a few days.
