a cookie for the chocolate lover, these double chocolate oatmeal cookies will not disappoint

it doesn’t matter how old you are, coming home to cookies warm from the oven is always a welcome surprise.

my kids are back to school next week thursday. at first they weren’t ready for summer to come to an end, but after picking up their schedules and i.d. card, and seeing friends for the first time since school got out in may, they are now excited to get back. almost as excited as i am for them to get back.

even though they are 14 and 17, they loving coming home from school to find warm cookies waiting for them. ¬†and if warm cookies help to make homework less of a struggle, then cookies they shall have. i’d do just about anything to make homework drama free.

my goal this year is to bake a batch of cookies once a week, and because my kids are serious chocolate lovers, these double chocolate oatmeal cookies are first up.

  • 2 cups flour
  • 1 cup old fashioned rolled oats
  • 2/3 cup unsweetened cocoa powder
  • 2 Tbsp cornstarch
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup (2 sticks) of butter, cold, cut into small pieces
  • 1 cup of brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla
  • 2 cups chocolate chips


  • line baking sheets with parchment paper or silpat mats
  • preheat oven to 400 degrees
  • in a large bowl whisk together the flour, oats, cocoa powder, corn starch, salt, baking soda, and baking powder, set aside
  • in the bowl of a stand mixer cream together the butter and sugars, because the butter is cold begin with the mixer on low, and then once it begins to soften increase speed to medium
  • add eggs one at a time, stopping to scrape down the sides of the bowl, and then add vanilla
  • gradually add in the flour mixture and the fold in the chocolate chips
  • divide dough into 16 pieces, form into a ball
  • place cookies on prepared baking sheets (i bake 8 per sheet)
  • bake 10 minutes, and then leave the cookies to rest on baking sheets for 15 minutes before moving to a rack
  • once completely cooled, the cookies can be kept in an airtight container for 3 days (reheat in the microwave to 3-5 seconds to melt chocolate) for longer storage keep cookies in the freezer

these double chocolate oatmeal cookies are not for the faint of heart. they are big. not quite as big as these levain bakery chocolate chip cookies [5], but still big. and like the levain bakery cookies are much better when under-baked. the outsides are crunchy but the centers are melty and gooey and absolutely delicious. if you are not a a fan of an under-baked cookie simply bake them for a few additional minutes.

unless you hide a few cookies like i do,these won’t last long, but if you happen to find yourself with a cookie or two a few days later, they are just as good on day 3 as they are right from the oven. just pop a cookie in the microwave for a few seconds to melt all those chocolate chips.
