I often joke about Stella {aka the fussy one}, but really her eating habits are no laughing matter. They drive me completely insane.

 As a baby, she was a dream.  I could feed her anything, and she happily gobbled it up.  Her list of approved menu items gets smaller by the day.


Dark Chocolate Cranberry Muffins


Stella will eat:



fruit of any kind

peas – frozen only, and they must still be frozen when eaten

homemade pasta, pizza, chicken noodle soup – minus the chicken and bean and cheese burritos

Breakfast before school is a challenge.  Charlie will not eat oatmeal, Stella will not eat eggs, if it hasn’t been cooked, they do  not see it as breakfast {so no to the cereal}

of any kind

and if they are mini – that is even better

she’s convinced they taste better small

when chocolate is involved,

well that just makes everyone happy

{even when served with a bowl of cereal}


Cranberry Dark Chocolate Mini Muffins


Dark Chocolate Cranberry {Mini} Muffins


  • 1 cup of flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 4 tbsp butter {melted}
  • 1/2 cup of sugar
  • 1 egg
  • 1/2 cup of milk
  • 1 tsp vanilla
  • 1/2 cup of chocolate covered cranberries
  • 1 tbsp melted butter
  • cinnamon/sugar (2 tbsp sugar mixed with 1/2 tsp cinnamon)


  • pre-heat the oven to 350
  • line {or spray with cooking spray} a mini muffin tin
  • combine the flour, salt, baking powder, and cinnamon {set aside}
  • cream together the butter and sugar
  • add in the egg, milk, and vanilla
  • add the dry ingredients and mix until combined
  • fold in 1/2 cup of chocolate covered cranberries
  • scoop into the muffin tins
  • bake 10 - 12 minutes
  • cool slightly
  • brush the tops with melted butter and sprinkle with cinnamon and sugar
