one can never have too many banana bread recipes if you ask me.  with or without nuts, i love them all. especially this dark chocolate chunk skillet banana bread. enjoy it for breakfast, pack it in lunch boxes, or treat yourself to an afternoon snack.

endure seems a fitting word for january. it stretches on and on. dull gray days. endlessly long nights. so, i’ve been baking the month away. these blueberry muffins have been on repeat for weeks. many bread bowls have been filled with soup. chocolate chip cookies make an appearance at least once a week. on a whim i even baked a chocolate cake for dessert  monday night.

honestly though, i love baking banana bread more than anything. and there never seems to be a lack of overly ripe bananas on the counter. to switch things up i baked one of my favorite banana bread recipes in a skillet. added a hefty dose of dark chocolate chunks, and left the middle a bit on the soft side (feel free to bake longer if the soft center doesn’t appeal to you).

Ingredients:

    • 2 cups flour
    • 1/2 cup packed brown sugar
    • 1/2 cup granulated sugar
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 3 very ripe bananas, mashed
    • 1/2 cup (1 stick) butter, melted
    • 2 eggs at room temperature
    • 1/3 cup sour cream
    • 1/2 Tbsp vanilla
    • 4 ounces dark chocolate, chopped (i use these Guittard, 70% Bittersweet Cocoa Baking Bars)

Directions:

  • preheat oven to 350°
  • brush a 10 inch  Cast Iron Skillet with melted butter
  • in a large bowl whisk together the flour, sugars,baking soda, and salt
  • in another bowl combine the banana, butter, eggs, sour cream, and vanilla
  • fold wet ingredients into the dry, making sure everything is combined
  • fold in the chocolate chunks, and pour batter into the prepared skillet
  • bake at 350° for 30 - 35 minutes (i bake mine for 30 because i love a soft center)
  • cool before slicing
 

even if it is on the sweet side, i say go ahead and enjoy a slice of dark chocolate chunk banana bread for breakfast. my favorite is to curl up with a good book, a cup of tea, and a slice in the afternoon before the kids invade.
