It’s no surprise that I LOVE food. I think about it all the time. My Facebook feed is FULL of food. My pinterest boards are full of food. Instagram, Google+, it’s all the same. Food, Food, and  more Food.

But let me tell you, losing weight after 40 is NO joke. It is hard. Especially when you basically dream about food all the time. Plus, weight loss strategies seem to be constantly changing.  You should snack, You should not snack. Count calories; No, don’t count calories. Fat is good, no fat is bad.

Here is what I know…

I do not like to feel hungry. I don’t enjoy depriving myself of things, and for me that will not be the solution. I need to snack, maybe not everyday, but with Ian getting home most nights after 6:30, our dinner is late, and I get HUNGRY which means I eat more than I should.

My snack addiction of the week – Luna Cookie Dough bars. I freakin’ love these bars, and could totally eat two or three a day. That would not be wise, not only because I am constantly clearing the shelves at Whole Foods, but they are PRICEY.

SO I made my own!

Copycat Luna Cookie Dough Bars


  • 1 cup of crispy rice cereal
  • 1/4 cup nut butter {I used cashew}
  • 1 Tbsp pure maple syrup
  • 1/4 tsp vanilla
  • 1/8 cup of finely chopped dark chocolate
  • 1/2 cup of dark chocolate {melted} for the topping


  • combine the cereal, nut butter, syrup, and vanilla in the bowl of a food processor
  • pulse until smooth
  • gently fold in the chopped chocolate
  • on a piece of parchment, press into a rectangle
  • chill until firm
  • coat with chocolate
  • once the chocolate has hardened cut into 4 pieces


with no butter, no sugar, and just a handful of ingredients, these are a snack you don’t have to feel guilty about enjoying
