just as delicious at the real thing, but so much easier; these cinnamon roll muffins are our new favorite grab and go breakfast for busy back to school mornings
It doesn’t seem to matter how early I wake Stella up in the morning. She never, and I mean never, is ready on time. 13 year old girls can primp like nobody’s business.
Shower, and hair, and more hair, and makeup, and more hair, and outfit changing. It is endless and means that she is always rushing to get out the door on time.
Stella would probably be happy with a quick bowl of cereal everyday. I know how important breakfast is, and while muffins may not be the most healthy of choices, these cinnamon roll muffins are delicious, and with a bowl of fruit and some milk a much better option than a boring bowl of cereal.
and if you happen to have teenage daughters like I do, they are a quick and perfectly portable option if you need to take your breakfast to go.

cinnamon roll muffins
Ingredients:
- filling -
- 1/3 cup brown sugar, packed
- 1 tsp cinnamon
- dash of salt
- 3 Tbsp buttermilk
- 2 Tbsp butter, melted
- muffins -
- 2 cups flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup buttermilk
- 1/3 cup sugar
- 2 Tbsp butter, melted
- 2 eggs, large
- 1 ts vanilla
- glaze -
- 2/3 cup powdered sugar
- 1-2 Tbsp milk or cream
- 1/4 tsp vanilla
Directions:
- preheat the oven to 375 degrees
- grease 12 muffin cups
- begin making the filling - combine all ingredients and stir until smooth
- to make the muffins - combine the flour, baking powder, cinnamon, baking soda, and salt
- whisk together the buttermilk, sugar, butter, eggs, and vanilla
- add liquid ingredients to the flour, and stir only until combined
- add 1 Tbsp batter into each muffin cup, top with filling (about 1 1/2 tsp for each) and then top with remaining batter
- bake for 15 minutes
- make glaze while the muffins are baking by whisking 1 Tbsp milk and vanilla into the powdered sugar (add more milk if your glaze is too thick)
- cool muffins 15 minutes, and then drizzle with glaze
No one can pass up a cinnamon roll, but for busy mornings they are simply not an option; although, the kids would probably rush to the table for a cinnamon roll
Cinnamon roll muffins have all that delicious cinnamon roll flavor, and are ready in a fraction of the time. Breakfast just doesn’t get any easier or more delicious.
