i first shared this recipe over on the hamilton beach blog, but it is one of our faves, so i knew i had to share it with you as well.

back to school seems to come faster and faster each year.

we are still in full summer mode, but I know that by the time we’re back from ny, the school year will be here before we know it. stella has high school orientation aug 2 already…yikes

so we’ll be trading beach towels and picnic baskets for backpacks and lunchboxes.

my kids are now both in high school, so our routine has changed quite a bit, but one thing that never seems to change is that kids come home from school hungry. the older they get, the hungrier they get.

as much as i love to bake cookies for my kids after school, yes even teens love cookies and milk, it is hot here until october. too hot to want to bake daily.

these cinnamon chips with fruit salsa is a fast and easy snack idea, ready in less than 30 minutes, no oven needed.

my toaster oven gets a workout. stella is always making something in it., and it is perfect for making small batch snacks, like these cinnamon chips.

  • for the chips-
  • 2 tortillas
  • 1 Tbsp butter, melted
  • 1 Tbsp sugar
  • 1/2 tsp cinnamon
  • for the salsa -
  • 1 granny smith apple, peeled, cored, and diced
  • 2 cups of strawberries, cleaned, hulled, and diced
  • 1 cup of raspberries
  • 1 Tbsp sugar
  • 2-3 mint leaves, chopped


  • Brush flour tortillas with melted butter - about 1 Tbsp for 2 tortillas
  • Sprinkle each tortilla with cinnamon sugar - 1 Tbsp of sugar combined with 1/2 tsp cinnamon
  • Using a pizza cutter, cut each tortilla into 8 wedges
  • Pre-heat the toaster oven at 350 degrees  for 5 minutes - the chips should be baked with the rack in the lowest position
  • Bake at 350 degrees for 8 minutes
  • if you don't have a toaster oven, the chips could be baked in a conventional oven at 350 F  bake 8 -  10 minutes.
  • While the chips are baking, dice one apple and 2 cups of strawberries, mix with 1 cup of raspberries and 1 - 2 Tbsp of sugar, depending on the sweetness of the berries.
  • Add chopped fresh mint and serve with the chips

the toaster oven baking pan will fit  one large or two small tortillas enough for one person, and while the salsa is best eaten fresh, it can be stored in an air tight container in the refrigerator for up to 2 days. (after that the fruit will get soggy)

honestly, my kids don’t get excited about fruit as an after-school snack, but when you add homemade cinnamon chips, they cannot get enough.
