I am a BIG fan of the one pot meal. And an even bigger fan of a meal that only requires a few ingredients that I always have in the pantry.

This is one of those meals.

Like most, I’m sure, you will always find chicken in my freezer. It may not be the most exciting,  but it is a staple for sure. I also  happen to always have potatoes and onions in the pantry, along with olive oil.  I use olive oil in my cooking every single day, and we also use it as a simple salad dressing, like this balsamic vinaigrette,  on most nights. When  olive oil is one of the main ingredients, quality definitely counts, and not all oils are created equal.

In this dish,  the olive oil is blended with apple cider, poured over chicken, onion, apples, and potatoes, and then the dish bakes in the oven.  How simple is that?   Believe me, on Sundays, when I’ve got three loads of laundry going, bread baking, kids running about, and dogs wanting to go to the park, I NEED simple.

Cider Baked Chicken

Ingredients

  • 1 lb boneless skinless chicken breasts {season with salt and pepper}
  • 1 large onion sliced
  • 2 large granny smith apples, peeled, cored, and quartered
  • 1 lb Yukon gold potatoes quartered
  • 1/4 cup of Pompeian Olive Oil {plus 2 tbsp for browning the chicken}
  • 1 cup of apple cider
  • salt and pepper to taste
  • sprinkle of herbs {optional}

Instructions

  • pre-heat the oven to 350
  • to brown the chicken first, heat 2 tbsp olive oil in a large dutch oven {med-high}
  • brown chicken a few pieces at a time {cooking about 2 minutes on each side, being careful not to crowd the pot}
  • return all of the chicken to the dutch oven,and top with the onion, potatoes, and apples
  • whisk together the olive oil and apple cider
  • season with salt and pepper
  • pour over the chicken
  • place the dutch oven {uncovered} into the oven
  • bake for about 1 - 1/2 hours {making sure the chicken is cooked through, and the potatoes and soft}

I always brown my chicken first,and it does add more flavor to the meal,  but this step can be left out, making it even easier to put together.
