It’s funny how  memory works.

Stella and I were at Target getting the last of the school supplies. We were headed to the back of the store and passed the toys, the Lego aisle to be exact. All of a sudden every trip to Target with the kids in tow came flashing back. When you shop with a little boy that is CRAZY for Lego, you will spend a LOT of time in the Lego aisle. Charlie would carefully examine each and every set, plan the ones he wanted to get next, and more often than not, we would leave with a character or two to add to our collection. I’m not proud, but bribery when shopping is sometimes MUCH needed.

I can’t say they were all fun shopping experiences, but the other day, standing there in the middle of the store,  they brought a smile to my face. It’s been a long time since we’ve visited that aisle.

Something similar happened when I visited my good friend Trish’s blog Mom On TimeOut {speaking of which I need a major time out today; BIG tempers happening}

She made a delicious chocolate caramel layered dessert, and there I was right back in my childhood kitchen.  My mom used to make something very similar; we called it slush cake {not the most attractive of names},  and it was always one of my favorites. A lot of people  make it with pistachio pudding, but I always favored the chocolate version.

Seeing as  how I was already feeling a bit nostalgic from our shopping trip, I took a dessert trip down memory lane with one slight alteration.

Chocolate Slush Pudding in Jars

Yield: 4 servings


  • 1/2 cup flour
  • 4 Tbsp butter {melted}
  • 1/3 cup walnuts {chopped}
  • 4 ounces of cream cheese
  • 1/2 cup powdered sugar
  • 1 cup of cool whip {plus more for topping}
  • 1 box of chocolate instant pudding
  • 1 1/2 cups milk


  • Mix flour, butter and nuts together
  • Press 1/4 cup of crust into jars {will make 4}
  • Bake in 350 degree oven for 15 minutes until golden color, allow to cool
  • Blend together the cream cheese and powdered sugar.
  • Fold in 3/4 - 1 cup of Cool Whip
  • Scoop an even amount onto each crust
  • Mix the pudding with the milk, and pour over the cream cheese layer.
  • Cover and refrigerate until ready to serve
  • Just before serving top each with cool whip and chocolate shavings.{optional}


I just cannot get enough desserts in jars. I will admit that scooping up that last bit of crust can get tricky in a jar, you’re bound to get some pudding on your fingers,  but I prefer any type of dessert that I do not need to cut and serve – straight lines have never been my thing.

Now if you’ll excuse me, I’m off to build something with our Lego stash.
