Chocolate Pudding Brownie Cookies

I don’t know why, but I rarely bake cookies. Trust me, I bake all the time, bread, rolls, muffins, all sorts of snacks for the kids. Cookies…not so much.
The other day when I was baking some pretzels for lunches, Charlie asked if I could PLEASE bake some cookies next. He also added…”Not some fancy blog cookie mom, just regular cookies.” Regular cookies, sure, I could have done that, but I didn’t.
{although he was not complaining at all}
Last week while cleaning out my pantry {you can see my pantry here} I found a box of instant pudding, so I finally decided to get on the pudding in cookies train.
Ingredients
- 1 box of Jello instant chocolate pudding {3.9 ounce}
- 4 tbsp butter {melted}
- 1 cup of sugar
- 2 eggs
- 1 tsp vanilla
- 1/3 cup of flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup of dark chocolate chunks {optional}
Instructions
- cream together the pudding mix, butter, sugar, eggs, and vanilla
- stir in the flour, baking powder, and salt
- stir just until the dry ingredients are incorporated
- mix in the chocolate chunks if using
- scoop 1 tbsp balls onto a parchment lined baking sheet {they will spread quite a bit}
- bake @350 for 8 - 10 minutes
- cool for at least 2 - 3 minutes before moving to a cooling rack {they are very soft}
I used a mix of brownie and cookie recipes that I had floating around, adding the pudding in place of cocoa powder. The chocolate chips were added for Charlie, and they were great, but totally optional.
The end result was part brownie, part cookie, and tasted like chocolate pudding. Not the regular cookie Charlie requested, but it’s hard to argue with your mouth full 🙂

Haha, my daughter asked me just the other day if I could make some plain peanut butter cookies. Nothing added or stuffed inside, just plain cookies! I love the brownie cookies! Simple but not boring!

Sounds like a great recipe. I am always making the same cookie recipe over and over because it is my son and husband’s favorite- oatmeal chocolate chip. I am planning on trying some new recipes soon so I might have to add this one to the list.
I wish I could get my kids to like oatmeal – those are my favorite 🙂

Pudding cookies are some of my favorites! You’ve reminded me that I haven’t made any in awhile – better remedy that asap!
OK, I will finally try pudding in cookies … I just haven’t made any cookies in a while. My guys like plain old ordinary cookies too, but they never turn down any cookie 🙂
I definitely recommend giving it a try…this was a first for me too, but they were SO good!
I love baking cookies…almost every other day! But these cookies might make me eat the whole batch! Soft cookies are my most favorite to eat! I think it’s funny when our kids ask (or beg) for just “regular” and non-creative food/treats. My kids think the blue box mac and cheese is a special treat…bcz they get the homemade stuff ALL the time. My children are so deprived! (hehe)
