We go through a lot of granola around here, and now that the kids are back in school even more so. Stella loves granola with her smoothie bowls every morning. She usually takes a small container to have with her lunch. I have it nearly every day with my yogurt.  Of course granola is delicious with milk, and this chocolate peanut butter granola is amazing plain right out of the jar.

And even though this granola seems totally decadent, it is a snack you can feel good about made with only a handful of simple ingredients, including Bob’s Red Mill Oats.

Oats are an incredibly versatile whole grain, and we use them for so much more than just oatmeal. Oats are rich in dietary fiber, help reduce cholesterol, and Bob’s Red Mill oats are kiln roasted to give them that wholesome flavor. We always have a few jars of overnight oats made with Bob’s Steel Cut Oats in the fridge, and for granola I almost always use Gluten Free Oats.

  • 3 cups of rolled oats (old fashioned or gluten free)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 cup creamy peanut butter
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup (or honey)
  • 1 tsp vanilla


  • preheat the oven to 325 degrees
  • add cocoa powder and salt to oats
  • in a small saucepan combine the peanut butter, brown sugar, coconut oil, and maple syrup
  • warm over med-low heat just until the peanut butter becomes smooth
  • stir in vanilla, and pour peanut butter mixture over the oats, and mix well
  • spread oats on a lined baking sheet (use either parchment or a silpat mat)
  • bake granola for 30 minutes stirring at least twice to prevent burning while it bakes
  • cool completely before storing in a airtight container
